They did. That truck and the three that were in convoy with it were all burnt over by the Currowan fire. All 14 firies in the convoy made it out unharmed but the truck in the video was completely destroyed...

Why can’t we have firetrucks this cool in America? They’d look less ugly than a lot of the cab-over firetrucks we have here too.

I think the issue is less with the trucks and more with styling elements. There’s a definite preference for tons of chrome and weird gold serif fonts that look like they are out of the 1920s (they probably are). The black plastic trim on the Aussie truck along with the high-vis B attenburg markings creates a much more modern look, even if the shape isn’t that different.
And of course if you want really cool looking fire trucks, you go to the airport:
